Curried Cabbage and Peas

You can do so many things with cabbage: you can boil it, you can make a soup or stew, you can make a stir fry, or coleslaw.  You can even curry it — which is what this recipe will show you!  I made this last week with some fresh, local cabbage, and it was delicious!!  This recipe goes well will basmati rice that is cooked with cumin seeds.

What you will need:

  • teaspoon of olive oilcabbage
  • small onion, chopped
  • three cloves of garlic, minced
  • 1 tablespoon of fresh ginger, minced
  • 1 medium sized carrot, 1/2 inch slices
  • 1 pound of cabbage, sliced into think strips (about 4 cups)
  • 1/2 teaspoon of salt
  • 2 tablespoons of curry powder
  • 1/2 to 3/4 of a cup of vegetable broth
  • 1 cup of peas

In a pan, saute the onion in the olive oil with a pinch of salt until the onions become translucent.  Add the garlic and ginger, and saute for another few minutes.  Add a 1/2 cup of vegetable broth, then add the carrot, cabbage, salt, and curry powder. Cover the pan, and cook for ten minutes.  If you want your cabbage cooked a little more, add the remaining 1/4 cup of broth.  Add the peas, and cook for a few more minutes.  Salt to taste, and serve!
