Pak Choi

pak choiIf you picked up some Pak Choi this week at the market, here is a delicious recipe for you to try out!  Pak Choi is an excellent source of vitamin A, and also contains approximately 50 mg of vitamin C per 4 oz. serving. These Asian greens are great when they are lightly steamed, and served with a light sauce.  Below is a recipe for such a sauce.  This recipe is from a book called “Cooking with the Right Side of the Brain” by Vicki Rae Chelf

1 cup of cold or room temp water or stock

1 1/2 tablespoons arrowroot powder

1/2 teaspoon roasted sesame oil

1/2 teaspoon honey

2 tablespoons tamari or shoyu or soy sauce

Combine all the ingredients in a small pan.  Stir to dissolve the arrowroot.   Bring mixture to a boil, stirring constantly.  Cook for 1-2 minutes, always stirring, until the sauce thickens to liking.

Note: Hot liquid will not mix with arrowroot.  If using hot stock, first dissolve the arrowroot in 1/4 cup water and only use 3/4 cup of stock)
